Or more like Vegan Baking. 🙂 I was introduced to this dessert by my friend’s mom and it’s so good! Super easy to make and really delicious. It’s fluffy and so yummy, and approved by non-vegans as well. These are not really brownies, perhaps it’s more like a sponge “cake”.
“Brownie Sponge Cake”
3 cups* of coconut yogurt (I use the brand My Love My Life)
1,5 cups of brown sugar
half a cup of melted coconut oil
1 cup of coconut flour
2 cups of flour
2-3 tablespoons of cacao
2 teaspoons of baking soda
2-3 tablespoons of jam (rosehip or apricot works well)
dark chocolate
How to:
1. Thoroughly mix together yogurt, sugar and coconut oil. I recommend whisking it with a mixer. Spend some time on this because the more you mix it the fluffier it will be.
2. Then with a wooden spoon mix in cacao and coconut flour, and before everything is incorporated add the flour and baking soda. Also make sure that you sift all the dry ingredients because they will mix and blend together better.
3. Transfer onto a baking tray (20×30 cm).
4. Bake on 180°C for 25 minutes and then let it cool down.
5. Once it’s mostly cooled down, spread on marmelade mixed with a bit of water and melt some dark chocolate which you then pour on top. Let that cool down completely and then it’s time to enjoy.
