Vegan Cooking #3

I haven't written a post about cooking for quite a while. Last one of these was in May! when I showed you my take on lentil curry. Today's recipe is nothing festive and December appropriate but that certainly doesn't mean it's not super delicious and comforting. A few days ago I was dreaming of making my own sushi but my boyfriend wasn't it the mood for it. I mean how could you not be in the mood for sushi?? We made tacos instead, which were btw extremely yummy! I was still going on and on about sushi but I was too lazy to make it, like it's usually the case. So the next day I made us deconstructed sushi, also known as sushi bowls. Yum! You could go all fancy and I use more ingredients but I like to keep it simple.

Vegan Sushi Bowl

- rice (I used brown rice),
- handful of mushrooms,
- avocado (I used half for one person),
- nori seaweed,
- soy sauce,
- sesame seeds and
- salt and black pepper.

1. Cook rice like you normally do.

2. While the rice is cooking, sauté the mushrooms and season them with salt and black pepper. Prepare avocado.

3. Strain the rice and put it in a bowl. Pour over some soy sauce, mix with a fork and then assemble your mushrooms, avocado and nori. Sprinkle over some sesame seeds and I also put a few drops of lemon juice on avocado. Add more soy sauce on top if you feel like it.

4. Enjoy!
