Vegan Cooking

Pred kratkim sem dobila prošnjo ali dve, da bi poleg mojih idej za zajtrk, delila še kakšno vegetarijansko ali vegansko jed primerno za kosilo. Nisem točno vedela katero naj sploh delim, ker se mi zdi, da sploh ne jem nič posebnega, vedno pa je moj cilj, da je jed čim hitreje pripravljena. Le komu se da čakati, da je skuhano? Meni že ne. No, morda včasih. :) Tako da sem se odločila za zelo enostavno in hitro jed - špagete z paradižnikovo omako in špinačo.
Za jed potrebujete:
- špagete (jaz sem uporabila vegan in polnozrnate špagete),
- pol žličke kokosovega olja,
- dva ali tri stroke česna,
- paradižnikovo omako,
- 2 pesti špinače (jaz sem uporabila še malo blitve) in
- sol in poper.

Najprej zavrite vodo in dajte kuhati špagete. Med tem, ko se kuhajo, v ponvi rahlo prepražite česen, dodajte paradižnikovo omako, posolite, popoprajte ter pustite minuto ali dve. Nato dodajte veliko pest špinače, pustite minuto oziroma še manj, da se le rahlo skuha in nato dodajte še preostalo špinačo ter izklopite. Jed je gotova. Ja, tako preprosto je! :) Špinačo sicer lahko kuhate tudi dlje, a jaz z vročino nočem uničiti vseh krasnih lastnosti surove špinače.
Za konec naj le še omenim, da pred jedjo spijte kozarec vode z limono ali pa preprosto pripravite solato z limoninim sokom, saj se železo, ki je v špinači, bolje absorbira v telo, ko poleg zaužijemo vitamin C.

A while ago I got a request or two to share what I eat for lunch or dinner. I guess some of you enjoy my breakfast ideas, which I'm super happy about! So, I didn't really know what to share, because I don't think I eat anything special, but I always have one thing in mind, to cook something that doesn't take a long time. Who has time to wait for the food to cook? I certainly don't. Well, maybe sometimes. :) That's why I decided to share with you a super easy, quick and at the same time delicious dish - spaghetti with tomato sauce and spinach. 

To make it you'll need:
- spaghetti (I used vegan and whole grain),
- half a teaspoon of coconut oil,
- two or three cloves of garlic,
- tomato sauce,
- two handfuls of spincah and
- salt and black pepper to taste.

First boil some water and cook your spaghetti. In the meantime saute your garlic and then add the tomato sauce, salt and pepper. After a minute or two add a handful of spinach (or a handful and a half) and cook for a minute, or rather 30 seconds. Then add the rest of the spincah, stir it in and turn the heat off. You're done. Yes, it's that simple! You can cook your spinach a bit more but I like to keep it almost raw so I don't destroy all of its raw nutrient power.

Oh and I also wanted to mention that you should drink a glass of lemon water before eating or eat a salad with lemon juice, because vitamin C helps your body absorb the iron in the spinach. :)
