Stop! Porridge Time!

Amarant. Trenutno moja glavna in najljubša sestavina zajtrka. Dolgo, predolgo nisem vedela kaj naj počnem z njim. Preizkusila sem "kokice", ki niso nikoli uspele, v glavno jed ga nisem nikoli vključila, na sladke stvari pa se niti spomnila nisem. Dokler nisem odkrila, da ga lahko skuham na enak način kot ovsene kosmiče in tako sem navdušena nad njim, da sem že kupila novo vrečkico. Če mi sledite na Instagramu, potem ste jed že videli, odlična je in upam, da jo preizkusite.

Potrebujete:
- amarant,
- mleko,
- banano,
- brusnice (neobvezno) in
- cimet.

Prvi korak v pripravi je, da večer prej namočite amarant. Zjutraj ga stresite v cedilo, sperite z vodo in dajte v posodo, kjer boste kuhali. Namakanje oreščkov, zrnja, semen in stročnic je zelo pomembno! Z namakanjem se nevtralizira velik del fitinske kisline, ki blokira absorpcijo mineralov. Poleg boljše absorpcije pa jih tako tudi lažje prebavimo.
 Namočenemu amarantu nato dodajte malo vode in mleka, razmerje med amarantom in tekočino je nekje 1:2 oziroma 1:1,5. Ali pa kar malo na približno, saj tekočino še vedno lahko prilijete. Namesto mleka lahko uporabite le vodo, meni je vedno boljši okus, če dodam še mleko. Kuhajte približno 10 do 15 minut, dodajte narezano banano in brusnice, premešajte in pustite 5 minut. Skupni čas kuhanja je približno 15 do 20 minut, odvisno od želene gostote.

Amarantovi kaši dodajte še cimet in jed je končana. Seveda pa na koncu lahko dodate še sadje, oreščke, kar želite. Jaz sem poleg cimeta dodala še maline in konopljina semena. Nom nom nom!

Yup, I'm gonna talk about porridge again! :) If you follow me on Instagram, then you know I tried Amaranth porridge for the first time this week! And let me tell you, this stuff is super delicious and I hope you try it! 
For a long, long time I didn't know what to do with amaranth. I tried "popcorn" but it never turned out good, it just didn't pop so I let that go. I've never tried amaranth risotto and things like that which is funny becase I love using different grains for risotto, not just rice. I also never even think of using it in sweet dishes like the one I'm gonna show you today. You can use these small seeds of amaranth just like you would oats, cook them and eat them. I'm so impressed with how the porridge turned out that I already bought a new pack. :) But enough of that and let's get cooking!
All you really need is Amaranth, Milk (I always use vegan milk, here I used Rice Milk), one Banana, Cranberries (optional) and Cinnamon. You don't need any sweeteners, I find banana is enough but you can add some honey or something similar. Okay so, the first thing you need to do is soak up your amaranth overnight. This is really important and you shouldn't skip this step! Soaking grains, nuts, seeds and legumes makes them easier to digest, it allows enzymes and bacteria to break down and reduce phytic acid which blocks the absorption of minerals. Soaking is super easy yet so effective. 
So, after you soak your amaranth overnight, rinse it off with fresh water and put in your saucepan. Add some water and milk, I usually use both but you can use just water or milk. Ratio between amaranth and liquid is somewhere between 1:2 or 1:1,5. I don't measure it so I don't know for sure. :) You can always add some more so don't go overboard. Cook for about 10 to 15 minutes and then add a banana and cranberries. Cook some more, for about 5 minutes and that is it! Now you can also add some toppings. I always add cinammon and here I also mixed it some raspberries and hemp seeds. Nom nom nom!

  2. Jaz imam vrečko amaranta doma že kar nekaj časa in tudi nisem vedela kaj naj z njim... bom sprobala tvoj recept. :D A kot prilogo h kosilu ga pa nisi še sprobala naredit - recimo namesto/kot kvinojo ali kus kus? :)
